		<description>&lt;b&gt;You should put the ...&lt;/b&gt; &lt;br&gt; You should put the vents on the opposite side of the smoke source.  It doesn&#039;t make to much of a difference on a small grill.  But it&#039;s just good habits.  Other then that I&#039;m hungry after watching that.</description>

I&#039;m searing the chicken for about 2 min. each side to lock in the juices.  This way your skin will also be a little more crispy.  After searing, move to indirect heat.  Using the waterpan will prevent the chicken from drying out.</description>
