<br />That&#8217;s a bigger question than you think, as there&#8217;s all kinds.  First, there&#8217;s two kinds of smoking &#8211; cold and hot.  Cold smoking is what they do with commercially smoked salmon, for instance.  They put the fish in a room and fill it with smoke, and the temperature doesn&#8217;t really rise much &#8211; not to cooking temperatures, that is.  That method takes 12-24 hours. You can buy smokers that do that &#8211; one used to be out there called &quot;Lil Smokey&quot;, I don&#8217;t know if they still offer it.  The other way, hot smoking, can be done on any BBQ.  You get your grill hot, put chips on the coals or the gas burners, and you just BBQ like usual but it smokes at the same time.  You need to soak the chips in water for 1/2 hour before you do it, so they don&#8217;t just start on fire.  Then your food is truly cooked, but it&#8217;s also smoked pretty well.  I used to do that all the time on my charcoal Weber BBQ.  I did salmon, chicken, turkey, ribs.  It&#8217;s easy and turns out real good.  I&#8217;ve since gone to gas and haven&#8217;t tried it much on the gas grill.  I think it&#8217;s better and easier on charcoal.  If you just want to have smokey food sometimes, I&#8217;d suggest just doing the hot smoke.  If the man is a hunter or fisherman and you want to be more serious, then there are dedicated smokers out there &#8211; just Google it &#8211; meat smokers or something like that.  I made some fine things on my Weber.  Just the standard grill, charcoal and some wet wood chips spread on the coals.  It&#8217;s indirect heat &#8211; make two piles of coals on either side and put the meat in the middle of the grill.  Put on the chips, put on the lid, and off it goes.</p>

<p>Ribs are easy to do, but just take longer than a steak to do them right. Make a batch or two of my memphis pork rub and slather the ribs with about 2 tbsp french&#8217;s mustard (it cooks off don&#8217;t worry) and 2-3 tbsp of my rub. Cook for 2 hours at 225°F and then wrap in tin foil for an hour. Pull them back out and cook until done (about 30-60 mins). You can easily tell when they&#8217;re done by picking them up w/ tongs and bounce them a little &#8211; they should crack/tear when ready.<br />

<br />Stainless is going to be your best bet.  I&#8217;d get them a grill cover when you buy the grill.  You might suggest the hose the grill off with fresh water weekly or monthly to minimize the salt damage.  The other thing you can do is buy a &quot;Big Green Egg&quot;.  They have metal parts but they&#8217;re mostly ceramic.  Those who have them swear by them, but they&#8217;re charcoal and not gas.  They&#8217;re expensive, though.</p>

<p>How do I determine if a barrel had food grade items in it?<br />
<br />Hi Look for the skull and cross bones. When you find a suitable drum cut a hole in each end and flush it through with a hose, them mark a centre line all around and cut with a grinder or a builders hammer and bolster chisel make a stand with bricks blocks or angle iron , and away you go any residue left on the drum will burn very quickly try not to inhale the fumes on the first fire, you may have to add a few holes to allow a little air in from the ends.<br />

<br />If you don&#8217;t see anything on ebay, I&#8217;d say take the $20 as every collector in the world is on ebay and if you didn&#8217;t see anything comperable, I&#8217;d say it&#8217;s a really small collector market for old BBQ grills.</p>

<br />I would use a propane torch like plumbers use to heat up the plastic.  At some point it should peel right off.</p>
