I personally keep it simple, fresh garlic, beer, cilantro, tiny bit of lemon juice, pinch of sea salt and marinade for 2 hours b4 grilling. I just want some new ideas to try.

Chicken Marinade

A very good marinade for broiled or grilled chicken.
INGREDIENTS:
1/4 cup vegetable oil
1/2 cup lemon juice
2 tablespoons minced onion
dash salt and pepper
1/4 teaspoon paprika
1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley
PREPARATION:
Mix all ingredients. Cover and refrigerate for 30 minutes before using. For grilled or broiled chicken, pour marinade over 2 to 3 pounds of chicken pieces; refrigerate for 4 hours or more. Do not re-use marinade.

Lemon Pepper Marinade

use the marinade on almost all meats and fish.. however Alaskan Coho Salmon is especially nice with this marinde! My husband really likes the Salmon but enjoys boneless, skinless chicken breasts as much!

INGREDIENTS:
2 tablespoons olive oil
1/2 small onion, finely minced
1 clove garlic, minced
2 tablespoons chopped fresh rosemary
1/4 cup fresh lemon juice
fresh course ground black pepper, to taste
grated zest of one lemon
PREPARATION:
Mix all the ingredients and use the marinade immediately with meat or fish in your choice of a zip-lock plastic bag or container. Cover or seal and marinate in refrigerator. Use this as a basting sauce as well, but bring to a rolling boil before using after using as a marinade.
With or without marinading first, you will find that if you are grilling, this works best for most fish. (Note: if you want to add a sweeter caramelizing effect. Add 1-2 tablespoons of orange blossom (or clover is alright) honey to the marinade recipe

in this one there is not dial or temp.its luks like a gas oven to me

there should be a dial for oven [bake] or grill,
turn the dial to oven [bake] then there is a temp dial for the oven settings
[a knob with numbers on it, ] from low to 400 etc
it should work for the grill also

I’m working with a high-rise condo developer who is looking for verbiage to put into their homeowner’s rules & regulations regarding gas grills. The building is 32 stories high and the grill would have to withstand winds up to 80 MPH. Sounds crazy but personally, I wouldn’t put a grill on a high balcony unless it is permanently mounted!! Would portable grills withstand these wind gusts? Crazy question but I’m wasting my afternoon researching this!! Thanks in advance!

Since it is in the developing stage you are lucky. Go ahead and have gas lines ran inside the wall to the balcony and have a nice stainless steel grill ancored to the floor and wall. Make it a selling point. So use a NICE grill with side burner. If you are really having trouble then I suggest calling some of the developers around the gulf coast. After all the huricanes down there you shouldnt have much trouble finding out how they do it.

BBQ tanks hold 20 lbs of propane. The tank, when empty, is 18 lbs, given or take 8 oz. That means that a full tank will weigh 38 lbs. If you weigh your tank and it only has 1 or 2 lbs in it, it may not work.

I have a weber grill, and the charcoal bricketts die out before I finish grilling. They haven’t turned to ash, some are only half burned. I only put enought coal to cover the bottom of the grill. The bottom of the grill has openenings in it, and they are open. If I put the top on the grill, I leave the openings on the lid open too. What am I doing wrong?

Fill the entire bottom with coal, 2 briquettes high. If you want the fire to last longer, close the holes on the bottom to halfway after it is ready to cook on (gray coals). Put the lid on the grill when you’re idle in between courses. Sometimes, if you’re grilling for a while, you just have to add more coal, it happens.

I love smoked ribs, but don’t have enough money for a smoker. Can anyone give me specific directions on how I can smoke ribs with flavor on a gas grill? What kind of chips? How do I make a smoker that will last the entire time? What kind of barbeque sauce should I use? How long should I cook the ribs? What temp should I cook the ribs at?

Thanks in advance for your help.

Smoker Ribs
I got my rib rack to go with my Weber Smokey Mountain Bullet. If you want really massive ribs, then consider getting a smoker. They are slow cookers, but the results are fabulous. Also, you don’t have to be there every second. With ribs, I only check four or five times during a session unless the weather is kind of strange (like rain or cold).

Grilled Ribs
It is possible to do good ribs on the grill, but it takes some planning and work. The key is to get the heat low and to cook the ribs a long time. Expect 3-4 hours for really yummy ribs. Ribs have cartilage which is tough, but that cooks down leaving super tender meat but only with a slow and long cooking approach. If you bend the ribs, and they do not bend easy, then you’ve not cooked them long enough.
