No problem.  But remember, once your coals are hot and ready, they really are not producing a true smoke anymore.  When grilling, a lot of the flavor comes from the meat on its own just being cooked over a high heat.  Seasoning and/or marinading the meat before hand opens up a whole other discussion.

I liked the tip on sliding the steak before letting it sit to grill, very wise and I did not know.
Will it work with chicken too?
I use Charcoal mostly but some meats are better without.  Anything that takes 10 min to cook would be a waste of time to start a 2 hour fire taking 30 min to get it started.  You have very valid point for using a gas grill.
