What is your favorite marinade (recipe and length) for grilling chicken?

I personally keep it simple, fresh garlic, beer, cilantro, tiny bit of lemon juice, pinch of sea salt and marinade for 2 hours b4 grilling. I just want some new ideas to try.

Chicken Marinade

A very good marinade for broiled or grilled chicken.
INGREDIENTS:
1/4 cup vegetable oil
1/2 cup lemon juice
2 tablespoons minced onion
dash salt and pepper
1/4 teaspoon paprika
1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley
PREPARATION:
Mix all ingredients. Cover and refrigerate for 30 minutes before using. For grilled or broiled chicken, pour marinade over 2 to 3 pounds of chicken pieces; refrigerate for 4 hours or more. Do not re-use marinade.

Lemon Pepper Marinade

use the marinade on almost all meats and fish.. however Alaskan Coho Salmon is especially nice with this marinde! My husband really likes the Salmon but enjoys boneless, skinless chicken breasts as much!

INGREDIENTS:
2 tablespoons olive oil
1/2 small onion, finely minced
1 clove garlic, minced
2 tablespoons chopped fresh rosemary
1/4 cup fresh lemon juice
fresh course ground black pepper, to taste
grated zest of one lemon
PREPARATION:
Mix all the ingredients and use the marinade immediately with meat or fish in your choice of a zip-lock plastic bag or container. Cover or seal and marinate in refrigerator. Use this as a basting sauce as well, but bring to a rolling boil before using after using as a marinade.
With or without marinading first, you will find that if you are grilling, this works best for most fish. (Note: if you want to add a sweeter caramelizing effect. Add 1-2 tablespoons of orange blossom (or clover is alright) honey to the marinade recipe

    Okay, sounds weird but trust me – it’s great…use mustard & whistershire sauce – it sounds nasty & looks nasty – but it’s actually very, very good.

  2. Garlic, adobo Goya with orange flavor, and Knorr’s Sazón with Culantro and achiote. It gives the chicken this nice orange color. Marinate for 3 hours. You can grill it, but you can also fry it. Delicious!!!
    Try it with a side of fried green plantains topped with garlic mayo-ketchup.

    1/2 cup orange juice, 2 tablespoons white vinegar, pinch of salt, white pepper, cayenne pepper, 1 tablespoon brown sugar and 1 tablespoon soy sauce.
    Marinate for 2-6 hours in the fridge. It gives a nice citrus glaze when you grill the chicken :)

  4. Sounds old, but I mix up a packet of Good Seasons Italian or Zesty Italian, and marinate my chicken in in in a zipper bag in the fridge. Comes out moist, tender, and full of flavor.

  7. Mine is pretty basic too….Fresh garlic, pepper, oregano, basil, olive oil and lime juice. Sometimes instead of lime juice, I will add some red wine vinegar…just a few dashes. It give it a really great flavor.

  8. The marinade I use is simple but tasty. Soy Sauce, Black Pepper, Lemon, Sliced Onions, Seame Oil, Honey, and any Hickory Bar-B-Q sauce and lots of minced garlic. The amount depends on how much chicken you want to grill, Taste the marinade to ensure that it taste good to you. Because if it taste good to you, chances are people will like it too. Marinade your chicken overnite prior to grilling, and then enjoy.

  9. One of the best ways to prepare any poultry is to soak it in a brine for at least 24 hours before cooking it. If you have the time for this preparation, it is completely worth it.

    You don’t need anything more than the salt, stock, and water, but everything you add makes it just a bit more flavorful:

    1 cup kosher salt
    1/2 cup light brown sugar
    1 gallon vegetable stock
    1 tablespoon black peppercorns
    1/2 tablespoon allspice berries
    1/2 tablespoon candied ginger
    1 gallon iced water

    Cook ingredients (except water) in a large pot until everything is dissolved. Let it cool and then add the ice water. Put your poultry in the liquid for 24 to 72 hours -(keep refrigerated!

  10. I like Honey Mustard or dijon mustard. I’ll make a very small tear in the skin and I let it marinate overnight. Cayenne pepper is sometimes a goo addition to this mixture.

    Ok This Will Sound Hurendious But Trust Me…

    Soak In Balsamic Vinigerette
    Leave It For Hmm Aroujnd 2 and a half hours probably

    Grill It However You Like

    And Add A Little Lemon…And Even Add A Little Parsely

  14. I like this for chicken and for pork
    2 tbsp dijon mustard
    1 tsp Rosemary
    1/2 tsp Thyme
    1/4 tsp Pepper
    fresh grated ginger

    I slather this on and put it into the fridge for a few hours and then grill or bake.

  15. this is SO easy and really good. All you do is mix soy sauce and honey together. you must mix it up pretty well. when you can taste more honey than anything, then it is good. marinade at least over nite making sure to rotate bag at least once and massage into chicken. cut the chicken into smaller pieces and cook for kabobs, i think it tastes better
