How does one cook a steak to look & taste as good as one cooked on an outdoor grill, if you don’t have one?
I like the chared look, skillet frying makes the meat look bland.
If you have a grill pan (has ridges on it) or this works well with a pan that is NOT a non-stick pan, get the pan screaming hot, place the seasoned steak on the pan and leave it alone for several minutes. Then turn the steak over, the steak will not stick once the side has gotten a nice crust on it. If you have to scrape it or struggle with it to turn it over leave it alone for a little while longer. Once you turn the steak over cook until done. The second side will not be as "charred" and crusty as the first side because the pan has cooled down.
This will create a lot of smoke watch your smoke detector if you have one!
I say non stick because you are not supposed to heat a non-stick pan that hot especially if there is nothing in it.
purchase a "grill pan" it’s a skillet with ridges and makes pan fried steaks look and taste more like outdoor grilled ones, my neice has one and says she will never grill outside again.
